What is spatchcocked chicken?
We begin with a fresh, all natural 3 lb. bird that we spatchcock (butterflied and trimmed) so it cooks evenly and more quickly. Our birds are pasture-raised with no antibiotics or hormones. Simply a superior bird. The chicken is marinated for 24 hrs and grilled on our custom-made charcoal fire for unbelievable crispness and flavor.
